American Food Stories: GUMBO

Gumbo – so many possibilities, so many questions. Ask anyone from Louisiana who makes the best gumbo, and the answer is sure to be “mamma.” This stew may be based on traditional West African dish, or derived of a French or Choctaw stew, but most likely combines the culinary practices of several cultures, including French, Spanish, German, Filipino, West African, and Choctaw. While there are about as many gumbo recipes as there are mammas in Louisiana, this dish is today the official cuisine of the state of Louisiana.
